Don’t be fooled: it’s impossible not to love this recipe for Chai Tea Pastis. The anise part of the pastis mellows and blends with the spices of the chai tea thanks to the Sour Cherry Syrup. A pleasant amalgamation of flavours, making for a most refreshing cocktail.

Ingredients
-1/2 oz to 3/4 oz Sour Cherry Syrup (depending on the size of your glass)
-Chilled chai tea
-3/4 oz pastis (here we use La Grande Hermine from Distillerie Fils du Roy)
-Cinnamon, star anise, sliced orange
Preparation
In a jar, let the tea infuse while chilled for about 4 hours, then remove the bags. Fill your glass with ice, then add the cold tea until the glass is approximately half full. Add the Sour Cherry Syrup and then the pastis. Garnish with a cinnamon stick, star anise and orange.
