Ingredients

-1 oz Wild Mint Syrup
-1 oz amaretto (We love the Québécois Avril Amaretto from Distillerie Mariana)
-1 oz lemon juice
-1 egg white
-Slice of lemon
-Ice

**Note that the egg white is only used to make an emulsion in your cocktail. The emulsion is the beautiful white foam on top of your cocktail. This gives it a lot of texture. If you’re allergic to eggs, no need to worry: the cocktail will be just as good without the egg white.

Preparation

First step: the emulsion. Mix all the ingredients, except the ice, in a shaker. Shake vigorously until the egg white becomes foamy. Open your shaker, add ice then shake again to chill the cocktail. Pour into a short glass and garnish with a lemon slice.
